Dokhtar Pitsch literally translates as “screwed by a girl”. The first product of saffron is Bunch Saffron threads which is the most common method of trading among farmers and producers.
It has a variety of names, including Daughter Screwed, Daste Pitsch, Khooshe.
For collecting this type of Saffron, the Saffron stigmas associated with cream are collected together to form a cluster and finally a strand is used to wrap the cluster from the middle part of I and is dried without any change in the cluster. Bunch or Daste is used to collect Saffron Coupe, Saffron Thread and Cut Saffron.
It is also called Red& White in which the red part is about 70% to 75% and the style is about 25% and 30%. According to Iran’s Standard, it is called filament 4%.
This quality has according to ISO standard 3632-2
- colouring, Crocin, of about 190
- flavour, Safranal, of about 40
- bitterness, Picrocrocin, of about 75.
Bunch Saffron Moisture
Saffron is very sensitive to moisture. Because its stigmas are dried and only needs it for fragrance so its moisture should be fewer than 8%.
